Ingredients
- 1 Tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound lean ground beef
- 2 Tbsp chili powder (North American style)
- 1 Tbsp ground cumin
- 1 tsp dried oregano
- 1 cup beef broth, or chicken broth
- 2 Tbsp tomato paste
- 2 tsp unsweetened cocoa powder
- 2 14 oz cans black beans, or red kidney beans (drained and rinsed)
- 2 14 oz cans crushed tomatoes, or strained tomatoes (tomato passata)
- 2 cups corn, frozen or canned (optional)
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Press the “Saute” button on your Instant Pot (you can adjust to “less” if your model tends to run hot). Once the pot is hot, add the olive oil and diced onions. Sauté the onions for about 3-4 minutes, stirring occasionally, until they are softened and lightly browned. Add the minced garlic and sauté for an additional 30 seconds until fragrant, being careful not to burn it.
- Add the lean ground beef to the pot, along with the chili powder, ground cumin, and dried oregano. Use a sturdy spoon or a ground meat chopper to break up the meat into small pieces. Continue to sauté until the ground beef is thoroughly browned, which should take approximately 4 minutes.

- Once the cooking cycle is complete, allow for a Natural Pressure Release (NPR) for 10 minutes. This means you do nothing and let the pressure release naturally for ten minutes. After 10 minutes, carefully quick release any remaining pressure by turning the steam release handle to the “Venting” position. Stand clear of the steam, and wait until the floating valve drops down, indicating all pressure has been released.
- Once the pressure is fully released, remove the lid. Stir the chili thoroughly until all the ingredients are well combined and the tomatoes are fully integrated.
