These Spinach Ricotta Puff Pastry Parcels are so tasty they will be eaten faster than you can say Puff Pastry Parcels! But don’t worry they are easy to make and perfect to prepare in advance.

Ingredients

  • 18 oz (500g) frozen spinach, thawed and squeezed of excess water (See Note 1 below)
  • 1 cup ricotta cheese
  • 1 egg
  • Salt to taste
  • Black Pepper, freshly grated, to taste
  • Pinch of Nutmeg
  • 2 sheets puff pastry, defrosted
  • 1 egg, lightly beaten (for egg wash)

Instructions

  1. In a medium bowl, thoroughly mix the ricotta cheese, one egg, the defrosted and well-squeezed spinach, and a little bit of nutmeg. Season generously with salt and freshly grated black pepper to taste.
  2. Prepare a large baking sheet by lining it with parchment paper or a silicone baking mat. This prevents sticking and ensures even baking.
  3. On a lightly floured surface, carefully roll out one sheet of puff pastry. Using a pizza cutter or a sharp knife, divide this sheet into 6 equal long rectangles. Transfer these rectangles to your prepared baking sheet. Using a pastry brush, generously brush the entire surface of each rectangle with the lightly beaten egg wash. Spoon approximately 2-3 tablespoons of the ricotta-spinach mixture onto one half of each rectangle. Fold the other half of the pastry over the filling, aligning the edges as precisely as possible. Crimp the edges firmly with a fork to create a secure seal, ensuring the filling stays enclosed. Refer to the photos for visual guidance if needed.
  4. Repeat these steps with the second puff pastry sheet, creating an additional 6 parcels, for a total of 12. Once all parcels are formed, use a sharp knife to slice two small slits on the top of each parcel; these act as air vents, allowing steam to escape and preventing sogginess. Brush the tops of all the pastry parcels with the remaining egg wash for a golden, crispy finish. Chill the assembled parcels in the refrigerator for at least 25 minutes, or up to 1 day if preparing in advance.
  5. During the final few minutes of the chilling time, preheat your oven to 375°F (190°C).
  6. Bake the pastry parcels for approximately 30 minutes, or until their tops are beautifully golden brown and the pastry is fully puffed and flaky. Carefully remove the parcels from the oven and allow them to cool slightly on the baking sheet before handling and serving. Enjoy them warm!

Notes

1. If your spinach is not yet defrosted, you can quickly prepare it by placing the frozen spinach in a pan with about 50 ml of water. Cover the pan and let it simmer for roughly 10 minutes, stirring a few times to ensure even cooking. Once the spinach is cooked and most of the water has evaporated, drain it thoroughly in a colander. Allow it to cool down for several minutes before adding it to your ricotta mixture; patience here is key to prevent the egg in the mixture from scrambling prematurely.
