Ingredients

For the tortillas:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/4 cup butter, room temperature
  • 1 tbsp vegetable oil
  • 1/2 cup warm water

For the Greek Salsa:

  • 1 cucumber, finely chopped
  • 1 cup kalamata olives, stone removed and finely chopped
  • 3 tomatoes, finely chopped
  • 1 red onion, finely chopped
  • 1 tbsp Greek Gyros Spice Rub
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar

To assemble the tortillas:

  • Tzatziki Sauce
  • Slow Cooker Pulled Pork Gyros

Instructions

  • In a bowl, mix flour and salt together. Then, add the butter and use your fingertips or a pastry blender to cut in the butter until the mixture resembles coarse crumbs.
  • Drizzle the vegetable oil over the mixture. Use a fork and gradually stir in the warm water until a shaggy dough forms. Transfer to a lightly floured surface and knead for about 4 minutes until the dough is elastic and smooth.
  • Cover the dough with plastic wrap and let it rest in the fridge for at least 30 minutes. This resting period allows the gluten to relax, resulting in more tender tortillas.
  • In the meantime, prepare the Greek salsa. Combine all the finely chopped ingredients (cucumber, olives, tomatoes, red onion) in a bowl. Season with 1 tablespoon of your homemade Greek Gyros Spice Rub. Add olive oil and balsamic vinegar, then stir gently to combine. Set aside to allow the flavors to meld.
  • Once the dough has rested, divide it into 12 equal pieces and roll each piece into a smooth ball. Heat a dry cast-iron skillet or non-stick pan over medium heat until hot.
  • On a lightly floured surface, roll out each dough ball into a thin 7-inch round. Use just enough flour to prevent sticking. Cook one tortilla at a time, placing it in the hot skillet. The tortilla will puff up and the bottom will develop browned spots in about 45 seconds. While one cooks, you can roll out the next.
  • Flip the tortilla over and cook the other side for another 30-45 seconds until it’s also lightly browned and cooked through.
  • Transfer the cooked tortilla to a plate lined with a clean kitchen towel. Stack the tortillas as they are cooked and keep them covered with the towel to retain warmth and softness until ready to serve.
  • To assemble your Greek Tacos, spread a layer of homemade Tzatziki sauce on each warm tortilla. Top with a generous portion of slow-cooked pulled pork gyros and a spoonful of the fresh Greek salsa. Serve immediately and enjoy!
