Ingredients

  • 1/2 lb medium shrimp, peeled and deveined, tails on
  • 1/2 lb sea scallops, quartered
  • 1/2 lb squid, tubes sliced into rings, tentacles trimmed, cleaned
  • 1/2 lb tilapia fillets, or other firm white fish, cut into bite-sized pieces
  • 1-1/2 lbs fresh mussels, scrubbed and debearded
  • 2 dozen cherrystone clams, scrubbed
  • 1 cup dry white wine
  • 1-1/2 lbs linguine
  • 3 tablespoons extra virgin olive oil
  • 8 cloves garlic, very finely chopped
  • 1/2 cup onion, very finely chopped
  • 1 can, 28-ounce San Marzano plum tomatoes, undrained
  • Salt and freshly ground black pepper, to taste
  • 1/2 teaspoon crushed red pepper flakes, or more to taste
  • 2 tablespoons chiffonade of fresh basil, plus extra for garnish

Instructions

  1. Peel and devein the shrimp, leaving the tails on. Cut the scallops into quarters. Arrange both on a large platter.
  2. Clean the squid thoroughly if necessary, then slice the tubes into rings. Trim any tough parts from the top of the tentacles. Add the squid to the platter.
  3. Cut the tilapia fillets in half lengthwise, then into bite-sized pieces. Add them to the platter with the other seafood, cover with plastic wrap, and refrigerate until ready to use.
  4. Rinse the clams and mussels under cool running water. Using a sharp knife or kitchen shears, trim any “beards” protruding from the mussels. Discard any open shells that do not close when tapped.
  5. In a deep, 6 to 7-quart pan, add 1/2 cup of the dry white wine. Cover and bring to a boil. Add the clams, cover, and cook until all the shells have opened. Using tongs, transfer the opened clams to a bowl and set aside. Discard any clams that did not open.
  6. Add the remaining 1/2 cup of wine to the same pan and return to boiling. Add the mussels, cover, and cook until all the shells open. Transfer about 24 of the mussels (still in their shells) to the bowl with the clams and set aside for garnish. Discard any mussels that did not open.
  7. Remove the meat from any remaining mussels, place it in a small bowl, and set aside. Discard the empty shells. Carefully strain the cooking broth from the pan into a separate bowl and set aside; this flavorful liquid will be used in the sauce.
  8. Bring a large pot of generously salted water to a rolling boil for the linguine.
  9. In the same pan used for the mussels and clams, heat the 3 tablespoons of extra virgin olive oil over medium heat. Add the finely chopped garlic and onion and cook, stirring frequently, until they are soft and lightly golden, being careful not to brown them. Then, stir in 1/2 cup of the reserved mussel-clam liquid along with the canned San Marzano tomatoes and their juice.
