Ingredients

  • 3 ears of corn, shucked (or 1 1/2 cups frozen corn)
  • 2 tablespoons olive oil, divided
  • 1 tablespoon butter
  • 1 garlic clove, minced
  • ½ cup finely diced red onion
  • 4 cups small-diced zucchini, (2 medium zucchini)
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • 1 lime, juice
  • ¼ cup fresh basil leaves, roughly chopped
  • Salt and freshly ground black pepper to taste

Instructions

  • Heat a large grill pan or use an outdoor grill. Brush the corn with 1 tablespoon of olive oil and season generously with salt and pepper. Grill over moderately high heat, turning frequently, until the kernels are crisp-tender and show attractive charred marks, about 12 minutes. Remove from heat and let cool slightly.
  • In a large skillet, heat the remaining 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Add the minced garlic to the skillet and cook, stirring constantly, until it becomes fragrant, which should take about 1 minute. Be careful not to burn the garlic.
  • Add the finely diced red onion to the skillet. Continue to cook, stirring occasionally, until the onion softens and becomes translucent, approximately 3–4 minutes.
