  • 1 cup clam juice

  • Freshly ground black pepper
  • Hot sauce to taste
  • 2 to 3 tablespoons fresh parsley, chopped

Instructions 

  • Rinse the clams under cool running water to remove any sand or dirt from their shells. Place the cleaned clams into the bottom of a large, heavy-bottomed pot or Dutch oven, ensuring it has a tight-fitting lid.
  • Add 1/2 cup of water, 1 cup of clam juice, 1/4 cup of dry white wine, and the 2 bay leaves to the pot with the clams. Cover the pot tightly with its lid and bring the liquid to a steady simmer over medium-high heat.
  • Continue to cook the clams, covered, for 8 to 12 minutes, or until all the clam shells have opened. Discard any clams that remain closed after this time. Carefully transfer the opened clams and all of their flavorful liquid to a large bowl and set aside to cool slightly. This liquid is essential for the chowder’s flavor.
  • While the clams are cooling, return the empty pot to the stovetop. Add the 1/4 lb of bacon, cut into 1/2-inch pieces, to the pan.
