  • 1 1/2 cups Arborio rice
  • 1/3 cup white wine
  • 1/2 tsp saffron threads
  • 3 1/2 cups chicken broth
  • 1/3 cup grated parmesan cheese
  • 1 Tbsp butter

For the Shrimps:

  • 1/2 pound large raw shrimp, deveined (shelled or peeled)
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 1/4 tsp red pepper flakes
  • 1/4 cup white wine
  • 1 Tbsp parsley, finely chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tsp lemon juice

Instructions

  1. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the finely diced onions along with a pinch of salt and sauté until they become translucent, which typically takes about 3-4 minutes. Increase the temperature to medium-high heat. Add the Arborio rice and cook for 3 minutes, stirring occasionally and allowing the rice to lightly stick to the bottom of the pan before scraping it off to toast evenly.
