Instant Pot Chicken Paprikas Recipe

By Lynne Webb
This Instant Pot version of our classic Chicken Paprikas recipe guarantees melt-in-your-mouth tender chicken, perfectly cooked egg noodles, and a rich, creamy sauce with a truly authentic paprika flavor. A comforting meal that comes together beautifully in your pressure cooker.
Prep: 10 mins
Cook: 35 mins
Total: 45 mins
Servings: 4 servings

Ingredients

  • 6 boneless, skinless chicken thighs
  • 1/4 cup all-purpose flour
  • Salt and freshly ground black pepper, to taste
  • 2 teaspoons sweet paprika, divided (high quality recommended)
  • 2 tablespoons unsalted butter
  • 1/2 cup chopped celery (about 1 stalk)
  • 1 cup chopped yellow onion (about 1 medium onion)
  • 2 cups low-sodium chicken broth, divided
  • 6 ounces wide egg noodles
  • 1/4 cup full-fat sour cream
  • 1 tablespoon tomato paste

Instructions

  1. Place the flour, 1 teaspoon of salt, and 1 teaspoon of the sweet paprika in a large zip-top plastic bag. Shake to combine the ingredients thoroughly. Trim any excess fat from the chicken thighs, then add them to the bag. Seal the bag and shake until each chicken piece is completely coated with the flour mixture. Set the coated chicken aside.
  2. Press the “Sauté” button on your Instant Pot and allow it to heat up. Once hot, add the butter to the inner pot. As soon as the butter melts and is shimmering, add the chopped celery and onion. Season these vegetables with a pinch of salt and pepper, then stir in the remaining 1 teaspoon of sweet paprika. Sauté, stirring occasionally, until the vegetables are lightly browned and softened, which usually takes about 4 to 5 minutes. This step is crucial for building a flavorful base.
  3. Pour in 1 cup of the low-sodium chicken broth into the Instant Pot. Using a spatula or wooden spoon, scrape the bottom of the pot thoroughly to dislodge any browned bits (fond). This “deglazing” step prevents a “Burn” warning and integrates all those caramelized flavors into your sauce. Carefully arrange the flour-coated chicken thighs in a single layer in the pot, turning them once or twice to ensure they are partially submerged and coated in the broth mixture.
  4. Cancel the “Sauté” function. Secure the lid onto the Instant Pot, making sure the sealing valve is in the “Sealing” position. Select the “Manual” or “Pressure Cook” function and set the cooking time to 5 minutes on high pressure. Once the cooking cycle is complete, allow the pressure to release naturally for at least 10 minutes (NR). After 10 minutes, carefully move the sealing valve to the “Venting” position to quick-release any remaining pressure. Once the float valve drops, open the lid. Transfer the cooked chicken to a plate and cover it loosely with aluminum foil to keep it warm.
  5. Add the remaining 1 cup of chicken broth to the Instant Pot. Stir in the egg noodles, ensuring they are fully submerged in the liquid. Lock the lid back onto the Instant Pot, again confirming the sealing valve is set to “Sealing.” Select the “Manual” or “Pressure Cook” function and set the cooking time to 4 minutes on high pressure. When the time is up, allow the pressure to naturally release for 2 minutes, then open the valve to quickly release any remaining pressure. Once the float valve drops, carefully remove the lid.
  6. To finish the dish and meld the flavors, press the “Sauté” button on the Instant Pot once more. Return the warmed chicken thighs to the pot with the noodles and sauce. Cook for just long enough to heat the chicken through, about 2 minutes, stirring gently to combine.
  7. Using a slotted spoon, carefully transfer the chicken and egg noodles to a large serving platter. With the Instant Pot still on “Sauté” (or turned off if the sauce is already hot), add the sour cream and tomato paste to the remaining sauce in the pot. Whisk vigorously until the sauce is smooth, creamy, and well combined. Taste and adjust seasoning as needed. Spoon the luscious paprika sauce generously over the chicken and noodles. Serve immediately, garnished with fresh parsley if desired.

Why the Instant Pot Elevates Your Chicken Paprikas Experience

For lovers of classic Hungarian flavors, the Instant Pot offers a transformative cooking experience for Chicken Paprikas. Its ability to create a sealed, high-pressure environment means chicken thighs become incredibly tender, far surpassing what’s often achievable with conventional stovetop cooking where meat can sometimes dry out. The pressure gently coaxes out the rich juices, ensuring every bite is moist and flavorful. Moreover, the deep infusion of spices, particularly the sweet paprika, is intensified within the sealed pot, yielding a more profound and authentic taste profile.

Beyond tenderness, the Instant Pot contributes significantly to the sauce’s remarkable texture. The high heat and pressure help to break down the vegetables and emulsify the fats and liquids, resulting in an exceptionally smooth and velvety sauce. This luxurious consistency perfectly coats the egg noodles, making each mouthful a decadent experience. The hands-off nature of pressure cooking also means you can achieve restaurant-quality results with minimal effort, allowing you to focus on other aspects of your meal or simply relax while your Instant Pot works its magic. It’s a truly smart way to prepare this comforting classic, ensuring consistent perfection every time.

The Soul of the Dish: Understanding Paprika

No discussion of Chicken Paprikas is complete without highlighting its star ingredient: paprika. This vibrant red spice is more than just a coloring agent; it’s the very soul of Hungarian cuisine. For an authentic Chicken Paprikas, selecting the right paprika is paramount. We strongly recommend using high-quality sweet Hungarian paprika. This variety offers a delicate sweetness and a rich, earthy flavor without any overpowering heat, providing that iconic beautiful reddish-orange hue to your sauce.

While you might find various types of paprika in stores – from smoked to hot – resist the urge to substitute. Smoked paprika, though delicious in other dishes, will alter the traditional profile of Paprikas. If you prefer a touch of heat, a tiny pinch of hot Hungarian paprika can be added along with the sweet, but always in moderation. A crucial tip: when adding paprika to your pot, ensure it is stirred into warm oil or liquid, not hot dry oil. Paprika can burn quickly, turning bitter and ruining the flavor of your dish. Freshness also matters; an older, less vibrant paprika will yield a duller flavor and color.

Key Ingredients and Smart Substitutions for Your Paprikas

Our Instant Pot Chicken Paprikas recipe relies on a harmonious blend of ingredients, each playing a vital role in achieving its signature taste and texture. Here’s a closer look:

  • Boneless, Skinless Chicken Thighs: We choose chicken thighs for their higher fat content, which makes them incredibly forgiving and succulent under pressure. They retain moisture beautifully, resulting in exceptionally tender chicken that practically falls apart. While chicken breast can be used, be mindful that it’s leaner and more prone to drying out; adjust pressure cooking time by 1-2 minutes if opting for breasts.
  • All-Purpose Flour: This is used to lightly coat the chicken, which helps create a thin crust during sautéing and acts as a thickening agent for the sauce. For a gluten-free alternative, you can omit the flour coating entirely and instead whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Add this slurry to the sauce at the very end (after adding sour cream and tomato paste) while on the “Sauté” function, stirring until thickened.
  • Sweet Paprika: As previously emphasized, this is non-negotiable for authentic flavor. Its gentle sweetness and rich color are fundamental to the dish.
  • Unsalted Butter, Celery, and Onion: These classic aromatics are sautéed to form the foundational layer of flavor for the stew. Butter adds richness, while the celery and onion provide depth and sweetness when caramelized.
  • Low-Sodium Chicken Broth: Essential for pressure cooking and forming the base of your flavorful sauce. Using low-sodium broth allows you to precisely control the overall saltiness of your dish.
  • Wide Egg Noodles: The traditional and perfect accompaniment for soaking up the creamy sauce. Cooking them directly in the Instant Pot with the remaining broth makes for an incredibly convenient one-pot meal component. Any sturdy, wide pasta can be substituted if egg noodles are unavailable.
  • Full-Fat Sour Cream & Tomato Paste: These are the finishing touches that lend Chicken Paprikas its characteristic creamy texture and subtle tang. Full-fat sour cream is crucial for richness and to prevent curdling. Tomato paste adds a concentrated umami depth and a beautiful reddish hue to the sauce, enhancing the overall flavor profile. For a dairy-free option, full-fat coconut cream can be used in place of sour cream, though it will impart a slightly different flavor.

Expert Tips for Instant Pot Chicken Paprikas Perfection

While this recipe is straightforward, a few key tips will ensure your Instant Pot Chicken Paprikas turns out flawlessly every time:

  • Embrace the Sauté Function: Do not skip browning your aromatics (celery and onion) and blooming the paprika in butter. This initial sauté step is vital for developing rich, complex flavors that define a great paprikas.
  • Deglaze, Deglaze, Deglaze: After sautéing, adding broth and thoroughly scraping the bottom of the Instant Pot with a wooden spoon or spatula is critical. This process, known as deglazing, lifts any stuck-on food bits, preventing the dreaded “Burn” error and incorporating those delicious caramelized flavors into your sauce.
  • Layering for Even Cooking: When adding the chicken, try to arrange the thighs in a relatively single layer as much as possible to promote even cooking. Similarly, ensure the egg noodles are mostly submerged in liquid during their cooking cycle.
  • Partial Natural Pressure Release for Chicken: Allowing the Instant Pot to naturally release pressure for at least 10 minutes after cooking the chicken helps the meat relax and stay incredibly tender and juicy. A full quick release can sometimes lead to tougher textures.
  • Integrate Dairy Carefully: Always whisk in the sour cream and tomato paste at the very end, after the pressure cooking is complete and the chicken and noodles have been removed or the “Sauté” function is off (or on a very low setting). Adding dairy under high heat can cause it to curdle.
  • Taste and Adjust: Before serving, always taste your sauce. Adjust salt, pepper, or even a tiny bit more paprika if you feel it needs a boost. A squeeze of fresh lemon juice at the end can also brighten the flavors beautifully.

Beyond the Bowl: Perfect Serving Suggestions

While egg noodles are the classic and most beloved companion for Chicken Paprikas, this wonderfully rich and creamy dish pairs beautifully with a variety of other sides, allowing you to customize your meal:

  • Spaetzle: These soft, chewy German egg noodles are another traditional choice and are excellent for soaking up every drop of the delicious sauce.
  • Mashed Potatoes: Creamy mashed potatoes provide a comforting canvas that complements the rich, savory sauce perfectly.
  • Rice: Simple steamed white or brown rice offers a lighter alternative, effectively absorbing the robust flavors of the paprikas.
  • Polenta: For a unique and rustic twist, a bed of creamy polenta makes an outstanding foundation for the tender chicken and sauce.
  • Crusty Bread: Don’t underestimate the joy of using a piece of crusty sourdough or a fresh baguette to sop up any leftover sauce – it’s an absolute must!
  • Green Salad: A crisp, fresh green salad with a light vinaigrette can provide a refreshing counterpoint to the richness of the main course.

Storing and Reheating Your Delicious Leftovers

One of the many joys of Instant Pot Chicken Paprikas is that it often tastes even better the next day as the flavors have more time to meld and deepen! To store any leftovers, transfer them to an airtight container and refrigerate for up to 3-4 days. When you’re ready to enjoy them again, gently reheat on the stovetop over medium-low heat, stirring occasionally, or in the microwave until warmed through.

If the sauce has thickened significantly upon cooling, you can easily thin it back to your desired consistency by stirring in a splash of extra chicken broth or water during reheating. For longer storage, Chicken Paprikas freezes exceptionally well. Store in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating gently, as described above.
