These Pumpkin Cupcakes are the perfect fall dessert! Perfectly spiced pumpkin cupcakes topped with an easy brown butter frosting and drizzled with salted caramel sauce. A must-bake this fall!

Ingredients 

  • 1/2 cup brown sugar, (100g)
  • 1/4 cup white sugar, (50g)
  • 1/3 cup vegetable oil, (80ml)
  • 1 tsp vanilla extract
  • 2 large eggs, room temperature
  • 1 cup canned pumpkin, (230g)
  • 1/4 cup milk, (60ml)
  • 1 1/2 cups all-purpose flour, (190g)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • Pinch ground allspice
  • 1/2 teaspoon salt

For the frosting:

  • 1/2 cup unsalted butter, room temperature (115g)
  • 2 cups powdered sugar, (240g)
  • 1 teaspoon vanilla extract
  • 2 tablespoons buttermilk
  • Caramel Sauce, optional
  • chopped pecan nuts, optional

Instructions 

  • Preheat oven to 350°F (177°C). Line a 12-cup muffin pan with paper liners.
  • Tip: Make the brown butter for the frosting now if you want to assemble the cupcakes on the same day. This allows it to cool and solidify properly.
  • In a large bowl, combine the brown sugar, white sugar, vegetable oil, vanilla extract, room temperature eggs, pumpkin puree, and milk. Whisk these wet ingredients until they are thoroughly combined and smooth.
  • In a separate small bowl (or a large measuring cup), whisk together the all-purpose flour, baking powder, baking soda, ground cloves, ground cinnamon, ground ginger, ground nutmeg, a pinch of ground allspice, and salt. Ensure all dry ingredients are well distributed.
  • Gently add the dry ingredients mixture to the wet ingredients. Stir until just combined. Be careful not to overmix the batter, as this can result in tough cupcakes. A few small lumps are perfectly fine.
  • Spoon the batter evenly into the prepared muffin cups, filling each only about 1/2 full. Bake for 20 to 25 minutes, or until a wooden skewer or toothpick inserted into the center of a cupcake comes out clean with only a few moist crumbs attached.
  • Allow the baked cupcakes to cool in the muffin pan for about 10 minutes before carefully transferring them to a wire cooling rack. Let them cool completely to room temperature before applying any frosting.
  • Brown the butter for the frosting: Take 1/4 cup of the unsalted butter, slice it into smaller pieces, and place them in a light-colored skillet (this helps you see the color change). Melt the butter over medium-low heat, stirring occasionally. Continue to cook until the butter turns a rich golden-brown color and lightly browned bits begin to form at the bottom of the pan. You’ll notice a distinct nutty aroma. This process typically takes about 5-8 minutes. Once browned, immediately pour the butter into a heatproof bowl and refrigerate it until it solidifies, about 30-60 minutes.
  • Make the frosting: In a large mixing bowl, using a handheld electric mixer or a stand mixer fitted with a paddle attachment, beat the remaining un-browned 1/4 cup of room temperature unsalted butter on medium speed until it is smooth and creamy, which should take about 30 seconds.
  • Add the completely cooled and solidified brown butter to the creamed butter. Beat the mixture until both types of butter are thoroughly combined and fluffy.
  • Gradually add the powdered sugar, one cup at a time, beating on low speed until fully incorporated. Stir in the vanilla extract, continuing to beat on low speed for another 30 seconds until the mixture is well combined.
  • Slowly add the buttermilk, one tablespoon at a time, beating after each addition, until the frosting reaches your desired smooth, spreadable consistency. Once all buttermilk is added, beat for 1 more minute at high speed to make the frosting light and airy.
  • Frost the completely cooled pumpkin cupcakes as desired. For a beautiful classic swirl, I recommend using a Wilton 1A large round piping tip, as shown in the pictures. Finish by drizzling with salted caramel sauce and sprinkling with chopped pecan nuts, if you wish, for an extra touch of flavor and texture.

Spices: For convenience, instead of using individual spices, you can substitute them with 2 and 1/2 teaspoons of pumpkin pie spice blend. This will give you a similar warm, aromatic flavor.
