Instructions

  1. Put a pot of salted water on to boil for the pasta.
  2. If your chicken breasts have tenderloins attached, remove them and reserve for another use. Place the breasts between 2 sheets of plastic wrap, pound them gently to an even thickness (about 1/2-inch), then slice them across the grain into 1/4 inch strips. This ensures quick and even cooking.
  3. In a large food storage bag, combine 2 tablespoons of the flour, 3/4 teaspoon salt, and a few generous grinds of fresh black pepper. Shake the bag well to combine.
