Ingredients

  • 1 1/2 cups all-purpose flour (195g)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/3 cup butter, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 1/2 cups mashed bananas (about 3 medium bananas)

For the Peanut Butter Filling:

  • 1/2 cup peanut butter
  • 1/3 cup powdered sugar

For the Peanut Topping:

  • 1 tbsp butter
  • 1/2 cup peanuts, chopped
  • 2 tbsp maple syrup

Instructions

  1. Preheat oven to 350°F (180°C) and line a 12-count muffin tin with muffin liners.
  2. In a medium bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Whisk gently to combine and set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), combine softened butter, granulated sugar, and light brown sugar. Beat at medium-high speed for about 4 minutes until the mixture is pale and fluffy.
  4. Add the large egg and vanilla extract to the butter mixture, and whisk until just combined. Stir in the mashed bananas until evenly incorporated.
  5. Gradually add the dry ingredients to the wet mixture. Stir just until combined, being careful not to overmix. A few streaks of flour are okay; lumps are fine.
  6. In a small separate bowl, combine peanut butter and powdered sugar. Mix until smooth and well combined.
  7. Spoon about 1 heaping tablespoon of muffin batter into the bottom of each prepared muffin cup.
  8. Place one heaping teaspoon of the peanut butter filling directly on top of the batter in each cup.
  9. Divide the remaining muffin batter evenly among the muffin cups, covering the peanut butter filling.
  10. In a small pan over medium heat, melt 1 tbsp of butter. Add the chopped peanuts and maple syrup. Stir constantly for about 1 minute until the peanuts are lightly caramelized, then remove from heat.
  11. Top each muffin with approximately 1 teaspoon of the caramelized peanut topping.
  12. Bake muffins for 20-25 minutes, or until a wooden skewer or toothpick inserted into the center of a muffin comes out clean or with only a few moist crumbs attached.
  13. Let the muffins cool in the muffin pan for about 10 minutes before carefully transferring them to a wire cooling rack to cool completely.
