Ingredients

  • 1 tablespoon butter
  • 1/4 cup walnuts, finely chopped
  • 1 cup panko crumbs
  • 1 tablespoon light brown sugar
  • 2 teaspoons cinnamon, divided
  • 1-1/2 cups applesauce, see recipe notes
  • 1 pint whipping cream (heavy cream)
  • 1-1/2 tablespoons confectioners’ sugar (powdered sugar)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Toasted Crumb Mixture: In a medium-sized pan, melt the butter over medium heat. Once melted, add the finely chopped walnuts. Cook, stirring frequently, for about 2 minutes, until the walnuts are very lightly toasted and fragrant. Be careful not to burn them. Next, add the panko crumbs, light brown sugar, and 1 teaspoon of the cinnamon to the pan. Continue to cook, stirring continually, until the mixture is well combined and the panko crumbs turn a beautiful light golden brown. This step is crucial for developing the rich, buttery, and nutty flavor that contrasts beautifully with the other layers. Once toasted, remove the pan from the heat and transfer the crumb mixture to a separate bowl or plate to cool completely. Cooling is important to maintain their crispness when assembling the parfaits.

  1. Layering for Perfection: Gather 6 martini glasses, elegant stemware, or other small dessert dishes, each capable of holding approximately 1/2 cup. Begin by placing about 1-1/2 tablespoons of the spiced applesauce at the bottom of each glass. Follow this with a layer of about 2 teaspoons of the cooled, toasted crumb mixture. Next, gently spoon about 2 tablespoons of the vanilla whipped cream over the crumbs. Repeat the crumb layer with another 2 teaspoons, then add approximately 2-1/2 tablespoons of applesauce. Finish this main layering sequence with a few more crumbs and about 2 more tablespoons of whipped cream.

  2. Serving and Storage Tips: If you plan to serve the Veiled Maidens immediately, sprinkle the remaining crumb mixture generously over the top of each dessert. The crunch of the fresh crumbs is a key element. If you are preparing these parfaits in advance, it’s best to omit the final top layer of crumbs for now. Instead, store the remaining crumbs separately in an airtight container at room temperature to keep them crisp. Cover the individual parfaits with plastic wrap and refrigerate for up to 4 hours. Just before serving, uncover the parfaits and add the reserved crispy crumbs to each one. This ensures optimal texture and presentation.
