  • 1 1/2 cups (200g) all-purpose flour
  • 1 cup (80g) unsweetened shredded coconut
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup (80ml) vegetable oil
  • 1 1/4 cup (150g) buttermilk
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 cup (100g) sugar

For the Vanilla Orange Buttercream (for 12 cupcakes):

  • 1 cup (230g) unsalted butter, softened to room temperature
  • 4 cups (480g) confectioners’ sugar
  • 3-4 tbsp fresh orange juice
  • 1 teaspoon pure vanilla extract
  • Pinch of salt, to taste
  • 2 tsp orange zest, for decorating

For the Orange Glaze (for 12 cupcakes):

  • 1 1/4 cup (150g) confectioners’ sugar
  • 2-3 tbsp fresh orange juice
  • 1 tsp orange zest
  • 4 tbsp shredded coconut, for decorating

Instructions

  1. Preheat your oven to 350°F (177°C) and line a 12-cup muffin pan with cupcake liners.
  2. Prepare the orange: Zest the orange, ensuring you only get the orange part and avoid the bitter white pith. You will need 2 tsp orange zest for the cupcake batter and additional zest for decorating (about 2 tsp for buttercream, 1 tsp for glaze).
  3. To fillet the orange: Cut the top and bottom off the orange. Using a sharp knife, remove the peel and all white pith by cutting downward in a curved motion, following the shape of the orange. Next, carefully cut between the membranes to segment the orange flesh. Chop the fillets into smaller pieces. You will need approximately 1/2 cup of these orange segments for the batter. Do not discard the remaining orange pulp and membranes; squeeze them to extract about 1/2 cup of fresh orange juice needed for the batter.
  4. Make the dry batter mix: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, shredded coconut, and 2 tsp of the orange zest. Set aside.
  5. Combine wet ingredients: In a separate large bowl, using a handheld or stand mixer with a paddle or whisk attachment, mix the vegetable oil, sugar, egg, 1/2 cup orange juice, vanilla extract, and buttermilk. Beat on medium speed until the mixture is smooth and creamy, about 1-2 minutes. Scrape down the sides of the bowl as needed. With the mixer running on low speed, gently fold in the small orange fillet pieces.
