  • 1 cup ricotta cheese
  • 4 tbsp confectioners’ sugar
  • 2 tsp lemon zest
  • 2 tsp lemon juice
  • 1/4 tsp vanilla extract
  • 1 box frozen puff pastry, thawed in the refrigerator, 2 sheets
  • 1 egg (for egg wash)
  • coarse sugar for garnish

Instructions

  • 1. Prepare the Filling: In a small bowl, combine ricotta cheese, confectioners’ sugar, lemon zest, lemon juice, and vanilla extract. Mix until the ingredients are well combined and the mixture is smooth. Set aside.
  • 2. Prepare the Pastry: Line a large baking sheet with parchment paper. On a lightly floured surface, carefully unroll one sheet of thawed puff pastry. Using a pizza cutter or sharp knife, cut the pastry sheet into 6 equal squares. Transfer these squares to your prepared baking sheet.
  • 3. Fill and Seal the Pockets: In a small bowl, whisk the egg with 1 teaspoon of water to create an egg wash. Using a pastry brush, lightly brush the puff pastry squares with the egg wash. Spoon 1-2 tablespoons of the ricotta mixture onto one half (forming a triangle) of each square. Fold the empty half of the square over the filling, aligning the edges as best as you can. Use a fork to firmly crimp and seal the edges all around, preventing the filling from escaping during baking.
  • 4. Finish and Chill: Repeat the filling and sealing process with the second puff pastry sheet, creating a total of 12 pockets.
