Why This Strawberry Roll Cake Recipe Shines

  • Effortlessly Elegant: This recipe delivers a truly beautiful, bakery-quality cake that will impress everyone, yet it comes together quickly and easily, even for novice bakers. You’ll be proud to present this visually stunning dessert at any gathering.
  • Perfect for Planning Ahead: One of the best qualities of many German cakes, including this Biskuitrolle, is that they often taste even better the next day. You can prepare this roll cake a day in advance, refrigerate it overnight, and the flavors will meld beautifully, making your event-day preparations smoother and stress-free.
  • Adaptable Flavor Profile: While strawberries are undoubtedly the star here, the creamy filling base is incredibly versatile. This allows you to easily experiment with other seasonal fruits, adapting the recipe to create unique roll cakes throughout the year.

Essential Ingredient Notes for Optimal Results

  • Eggs: This recipe calls for 3 large eggs. For the best volume and a perfectly airy sponge cake, ensure your eggs are at room temperature. Cold eggs don’t whip as effectively, which is crucial for the cake’s light texture.
  • Vanilla: Enhance the cake’s flavor with either pure vanilla extract or traditional vanilla sugar. Both will impart a lovely aromatic depth to your sponge.
  • Flour: Cake flour is key to achieving that delicate, tender crumb characteristic of a perfect roll cake. If you don’t have it on hand, you can easily make your own: measure 1 cup of all-purpose flour, remove 2 tablespoons, then replace them with 2 tablespoons of corn starch. Stir well to combine and sift once to ensure even distribution and a finer texture.
  • Baking Powder: While sponge cakes traditionally rely on whipped eggs for leavening, a touch of baking powder provides an extra layer of insurance, making the cake roll base consistently light and virtually foolproof.
  • Butter: Always opt for unsalted butter in baking to control the overall saltiness of your dessert. Like the cream cheese, the butter for the filling should be softened to room temperature for a smooth, lump-free cream.
  • Cream Cheese: For the richest, creamiest filling, full-fat cream cheese is highly recommended. Make sure it’s properly softened (take it out of the fridge at least 30 minutes before use) to prevent lumps and ensure it blends seamlessly with the other ingredients.
  • Strawberries: Fresh strawberries deliver the most vibrant flavor and color for the filling. However, if fresh berries aren’t in season, an equal amount of frozen strawberries can be used – just be sure to thaw and drain them well before puréeing.
  • Garnish: To beautifully decorate your finished cake, we suggest using fluffy homemade whipped cream and a scattering of fresh, whole strawberries. These not only add visual appeal but also enhance the fresh berry experience.

Expert Tips and Tricks for a Flawless Strawberry Roll Cake

  • Make-ahead Magic: To simplify your baking process, you can prepare the cake roll layer a day in advance. Once baked and rolled in a towel, wrap it tightly in plastic wrap and store it in the refrigerator. When you’re ready to fill it, allow the rolled cake to come to room temperature on your counter while you prepare the strawberry filling. This technique not only saves time but also often makes the cake easier to unroll without cracking.
  • Mastering the Sponge Cake: This roll cake relies on a delicate sponge cake (Biskuitteig), a cornerstone of European baking. The secret to its signature light and airy texture is the volume achieved by properly whipping the eggs and sugar. It’s crucial to beat this mixture for the full duration specified in the recipe – typically 8-10 minutes – until it’s thick, pale, and has tripled in volume. Many traditional sponge recipes omit baking powder entirely, relying solely on the aerated egg mixture for lift. However, our recipe includes a small amount of baking powder as a failsafe, ensuring consistent, fluffy results every time.
  • The Art of Baking Time: Precision in baking is paramount for a roll cake. Avoid the temptation to overbake the sponge cake layer at all costs. An overbaked cake will become dry and brittle, making it incredibly difficult to roll without cracking. Look for a lightly golden hue and a springy touch – it’s better to slightly underbake than to overbake.
  • The Crucial Roll: Timing is everything when rolling a sponge cake. Immediately after removing the cake from the oven, invert it onto a generously powdered sugar-dusted kitchen towel. Do NOT allow it to cool before rolling; the cake needs to be hot and pliable to prevent cracks. Gently roll the cake and towel together from one of the shorter sides. Rolling from the short side ensures you achieve more layers and a beautiful, tight swirl in the finished cake. Let it cool completely while still rolled in the towel, seam-side down.
  • The Perfect Strawberry Filling: The technique of reducing the fresh strawberry purée is a game-changer. By simmering the purée, you not only intensify that wonderful, fresh strawberry flavor but also evaporate excess moisture. This is vital for preventing a watery filling that could make your cake soggy or cause it to spread too much when sliced. The concentrated purée adds robust flavor without compromising the filling’s creamy consistency.
  • Creative Decorating Options: While a swirl of homemade whipped cream and fresh strawberries offers a classic and elegant finish, feel free to get creative! For a simpler, equally charming presentation, a light dusting of powdered sugar over the finished roll cake provides a rustic yet sophisticated touch.

Frequently Asked Questions About Strawberry Roll Cake

How do I prevent my cake roll from cracking?

Preventing cracks in a roll cake is a common concern, but it’s easily achieved with a few key steps. First, and most importantly, avoid overbaking the cake layer. Bake it just until it’s set and lightly golden – a dry cake will inevitably crack. The moment it comes out of the oven, immediately invert the hot cake onto a clean kitchen towel that has been generously dusted with powdered sugar. Then, without delay, roll up the cake along with the towel from a short end. Rolling it while it’s still hot and pliable allows it to “set” in a curved shape. Let it cool completely in this rolled position, seam side down, at room temperature. This process trains the cake to maintain its roll, greatly reducing the risk of cracking.

Can I make this Strawberry Roll Cake the day before serving?

Absolutely, and in fact, we highly recommend it! Making this cake a day in advance and chilling it overnight yields several benefits. Firstly, the filling has ample time to firm up within the cake, making slicing much cleaner and easier, resulting in beautifully defined swirls. Secondly, and perhaps most delightfully, the moisture from the creamy strawberry filling subtly infuses into the sponge cake, making it incredibly soft, tender, and even more flavorful. This allows all the components to meld together perfectly, enhancing the overall taste and texture profile of your Biskuitrolle.

Creative Flavor Variations for Your Roll Cake

While our Strawberry Roll Cake is an undeniable crowd-pleaser, the beauty of this recipe lies in its adaptability. You can easily switch out the fruit to create a myriad of delightful variations, depending on what’s fresh and in season. The key is to use the same amount of fruit as specified for the strawberries and prepare it using the same reduction method. Aim for about 1/4 cup of intensely flavored, reduced fruit purée to incorporate into your cream cheese filling. Here are some exciting ideas to inspire your next roll cake creation:

  • Berry Bliss: Explore the delightful flavors of other berries. Think sweet raspberries, tangy blueberries, or a mixed berry medley for a vibrant and delicious alternative.
  • Stone Fruit Sensations: When summer is in full swing, harness the sweetness of stone fruits. Peaches, apricots, mangoes, or even tart cherries can create a wonderfully aromatic and flavorful roll cake, perfect for showcasing seasonal produce.

Serving and Storage Best Practices

To ensure your Strawberry Roll Cake looks its absolute best, garnish it with whipped cream and fresh strawberries just before serving, especially if you’ve prepared it in advance. For impeccably clean slices and to prevent the filling from squishing out, we highly recommend chilling the cake in the refrigerator for at least 30 minutes before cutting and serving. The firmer, cold filling makes slicing a breeze.

For storage, cover any leftover cake tightly with plastic wrap or place it in an airtight container and keep it refrigerated. This Strawberry Roll Cake will remain fresh and delicious for up to 3 days, maintaining its delightful texture and flavor.

Strawberry Roll Cake (Biskuitrolle) is a light and refreshing cake that’s perfect for summer! A fluffy cake roll that tastes delicious and is perfect for guests.

Prep Time: 45 minutes
Cook Time: 15 minutes
Total Time: 1 hour
Servings: 8

Equipment

  • Stand Mixer
  • Immersion Blender

Ingredients

For the Roll Cake

  • 3 large eggs
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup cake flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • powdered sugar, for dusting

For the Strawberry Filling

  • ½ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 6 oz strawberries, chopped

For the Garnish

  • ½ cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • 6 whole strawberries

Instructions

  1. Preheat oven to 400°F (200°C) and line a 15×10-inch rimmed baking sheet (or jelly roll pan) with parchment paper.
  2. In the bowl of a stand mixer fitted with the whisk attachment, beat eggs, sugar, and vanilla on medium-high speed until thick and pale and tripled in volume, about 8–10 minutes.
  3. In a small bowl, combine the flour, salt, and baking powder.
  4. In three additions, sift the flour mixture into the egg mixture, using a silicone spatula to fold it in after each addition.
  5. Transfer batter to the prepared baking sheet. Smooth the top with an offset spatula. Bake until light golden brown, about 8–10 minutes.
  6. Dust a clean kitchen towel generously with powdered sugar and invert the baking sheet with the cake onto it; slowly remove the parchment paper. You can brush the paper with a little bit of water to make it easier to peel off.
  7. Using the towel and starting at a short end, roll up the cake and towel. Let cool completely, rolled into the towel, seam side down.
  8. When the cake has cooled, make the strawberry filling.
  9. Using a handheld immersion blender or food processor, purée the strawberries. You should have about 1/2 cup strawberry purée.
  10. In a small saucepan, reduce the purée by half. Let cool.
  11. In the bowl of a stand mixer fitted with the paddle attachment, beat butter and powdered sugar at medium speed until pale and fluffy.
  12. Add cream cheese and mix until the mixture is whipped, white and fluffy, about 1–2 minutes. Scrape down the bowl as needed.
  13. Add the strawberry purée and stir into the mixture on low speed until just fully incorporated.
  14. Carefully unroll the cake. Spread the strawberry filling evenly over the surface, leaving a 1/2-inch border on the outer short end. Gently roll up the cake tightly in the same direction you rolled it the first time (without the towel).
  15. Place it on a serving platter and cut off the ends for a prettier cake if desired.
  16. To garnish, make whipped cream by whipping 1/2 cup heavy cream with 1 tbsp powdered sugar on medium-high speed until soft peaks form.
  17. Garnish the cake with dollops of whipped cream and strawberries.
